An aggregator takes a fifth to a third of every order it sends you. A direct ordering channel does not have to replace them to be worth building — it only has to take the repeat customers back.

Udupi cuisine carries a name that reaches well beyond the district, and a restaurant here competes on a reputation that is already partly made. What it usually lacks is the direct channel — the regulars ordering through an app that charges commission on a customer who would have walked in anyway.

The realistic goal is not to beat the aggregators. It is to own the repeat orders, the large orders and the bookings, where the commission actually hurts and where the customer already knows what they want.

Questions we get asked

Will customers actually order directly instead of using an app?

Some will, mostly the regulars, and mostly for larger orders — which are the ones where the commission hurts most. Anyone promising you the whole aggregator volume back is selling you something.

Do we need our own delivery?

Not necessarily. Direct ordering with pickup, or with a local delivery arrangement, covers most of the value without you running a fleet.

What matters more, the website or the Google listing?

For a restaurant, the Google Business Profile, clearly. We will tell you to fix that first even though it is the smaller piece of work.
